Smashed Golden Kumara & Spinach On Toast

Want to try something different other than smashed Avocado on toast? If you love Sweet golden Kumara you will love it on toast!



Ingredients 1 Piece of Freya's Rye bread ( or any other preference )

1 Sweet Golden Kumara ( Golden potato )

1 ts Curry Powder ( Chilli Powder)

1 ts Paprika

1 Cup spinach

1 ts of garlic and herb salt

1 tbs lemon juice

Pinch of Himalayan salt

Pinch of pepper

Pumpkin seeds & pepitas


Method

. Preheat your oven to 150% degrees

. Grab a pot and add 1 1/2 cup of water and wait for it to boil

. Add in your Golden Kumara and let it boil for 20-25 minutes

. Drain your kumara and let it cool down for 10 minutes

. Add your spinach a mixing bowl, add 1ts of garlic and herb salt & 1ts lemon juice and mix it together.

. Add a bit of coconut oil on and add the spinach onto the cooking tray and put in it the oven for 10 - 15 minutes until you get a crispy texture

. While you wait for your spinach to cook, In a bowl add your golden kumara and mash it all together

. Add the curry powder, paprika, garlic, and herb salt and mix it together and put aside until the spinach is cooked

. while you wait for your Spinach to cook and your Kumara cools down aside, start putting your toast in the toaster.

. Once cooked grab the spinach out of the oven and start dishing up your plate
