Red Curry Rice with Vegetables

If you want something different to try and love Thai Red Curry then you will also like Red Curry rice with vegetables.


Ingriedents:

1 can coconut cream

1 cup of rice

1 - 2 cups of water

1-2 Tbs red curry paste ( can add more to suit your taste buds)

1/4 cup pumpkin

1/4 cup egg plant

1/4 cup capscium ( any colour )

1/4 cup carrot

1/4 courgette


In a pot boil your vegetables, pumpkin, eggplant, capsicum,carrot and courgette for 15-20 minutes.

While waiting for the vegetables to boil, in a pot combine your rice, coocnut milk and water. Give it a stir and let it simmer for 5 minutes.

.Add in the red curry paste and let it desolve right through, stirring constantly.

( if the rice is sticking to the pot add a bit more water and give it a stir ) and let the coconut milk absorb into the rice so there is no cream consistancy. ( approx 20 minutes )

Once the vegetables are boiled, drain your vegetables using a Colander and put aside.

Once the rice has cooked, dish up your rice and add your vegetables on top!

Option ( you can mix your vegetables with the rice too )
