Crispy Bbq Jackfruit Quesadillas

A simple recipe to make for those who have had a long day at work and want something nice and easy.
Ingredients:
1/2 cup jackfruit
1/4 cup tomato sauce
1 tbs hoisin or any Asian sweet sauce you've got
1 tsp paprika
1 pinch of onion powder
1 pinch garlic powder
1/4 cup diced capsicum
1/4 cup courgette
1/2 cup or 1 cup spinach
Vegan cheese
2 wraps ( any you prefer )
Optional: Guacamole:
1 Avocado
less than half a cut of red onion
5 strips of capsicum ( any color)
1/2 lemon or can use lemon juice
Sweet chili sauce to drizzle on to
Method: Preheat your oven 150 degrees
. Chop the courgette & capsicum and pop on an oven tray and grill the veggies for 10-15 mins.
. While waiting for the veggies to grill. Crush your jackfruit using a fork so it splits into pieces.
. Combine tomato sauce, hoisin, paprika, onion powder, garlic powder, and mix together in a bowl.
. Once your veggies have finished roasting take them out of the oven and set aside.
. Grab your oven tray and place a wrap on the tray and add your, bbq jackfruit, spinach, grilled veggies. sprinkle your cheese on top and place the other wrap over the top and cook in the oven for 10-15 minutes or until crispy.
. While waiting for the quesadilla to cook. Cut your avocado and place it in a bowl and use a fork to mash it well together.
. Cut red onion and capsicum into cubes and add into the bowl with the smashed avo and drizzle your lemon juice on top, with your chili sauce and stir together with a fork.
Once the quesadilla is cook. Dish up your plate and enjoy it!
