An easy 5 minute quick breakfast idea for those who are in a rush or wanting something light for breakfast. No sugar or other preservatives added in. 100% organic and natural.
Method
. 1/4 cup blueberries
. 2 Tbs water
. 1 Tbs Chia seeds
. Rye bread or any bread you prefer to use
. Crunchy peanut butter ( I used Fix's & Foggs )
. Place your pot on the stove and turn it to low heat, add 2 tbs of water in the pot until it boils
. Add in your blueberries and crush them with a fork so you get a juice texture and let it simmer for 2 minutes until the juice darkens ( you don't have to crush them all, just a few to get a mixed texture)
. Once the berry juice has dissolved you can now sprinkle chia seeds and stir for a few seconds.
. Put the mixture aside and let it cool for a few minutes, while you put your bread in the toaster
. Spread peanut butter on your toast and then spread your blueberry jam on top
. Sprinkle chia seeds and blueberries or whatever toppings you'd like.
